Riesling is all about the green apple flavours. It has balanced minerality with strong flavours of granny smith apples. If it is made dry, then it will be quite crisp and the tartness of the apple will be pronounced. If made off dry, then there will be a bit of sweetness to balance out the tartness. We tend to prefer it off-dry! 

Notes on 2021 Riesling: This years Riesling is quite high in acidity. We strongly recommend making this wine off dry. This will balance the acidity, otherwise it will be very tart. If you need any tips on how to do that, let us know!
