Made by Guelph's own Escarpment Labs Yeast Company. This is their Ardennes yeast. A very versatile and production-friendly Belgian ale yeast, producing balanced Belgian esters and spicy notes. One of the rare Belgian strains which flocculates relatively well, making repitching and/or cropping easier when compared to other Belgian yeasts.
